Varkensfilet in deeg
Totale bereidingstijd: 90–100 minuten
voor 4 porties
Ingrediënten
2 varkensfilets (à 300 g)
Zout
Peper
Paprika
50 g boter
75 g doorregen spek, in blokjes
1 ui, in blokjes
400 g champignonschijfjes
4 tomaten (blik)
1 eetlepel peterselie, gehakt
450 g bladerdeeg
Voor het bestrijken
1 eidooier
4 eetlepels melk

Glazen schaal
Bereiding
Kruid de filets met zout, peper en papri‐
ka. Br
aad het vlees kort aan in de pan
met boter. Haal het vlees weer uit de
pan.
Doe het spek en de uien in het braadvet
en bak de
ze. Voeg de champignon‐
schijfjes en de uitgelekte, kleiner gesne‐
den tomaten toe. Stoof het geheel even
en kruid het met zout, peper, peterselie
en paprika.
Rol het bladerdeeg tot twee rechthoe‐
k
en uit (van ca. 30 x 20 cm). Leg hierop
een filet. Verdeel de vulling over de fi‐
lets. Sluit het bladerdeeg om het vlees
en de vulling. Druk de randen goed sa‐
men. Maak van de deegr
estjes decora‐
ties en leg die op de pakketjes.
Leg de pakketjes op de met water afge‐
spoelde gla
zen schaal en bestrijk het
deeg met het geklutste ei-melkmeng‐
sel. Bak de pakketjes goudbruin.
Serveer de filets gehalveerd of in plak‐
k
en gesneden.
