Lemon Meringue Pie
Totale bereidingstijd: 80 minuten
für 8–10 stukken
Ingrediënten deeg
275 g bloem
150 g boter
25 g suiker
2 eidooiers
20–30 g koud water
Ingrediënten vulling
sap en geraspte schil van 4 grote ci‐
troenen
75 g maïszetmeel
500 ml water
5 eidooiers
175 g suiker
Ingrediënten eiwitschuim
5 eiwitten
275 g suiker

kookpot
taartvorm 25 cm, hoogte 3,25 cm
Bereiding
Kneed de bloem, de boter, de suiker,
het water en de eidooiers totdat er een
gladde deegmassa ontstaat. Zet het
deeg vervolgens 30 minuten in de koel‐
kast.
Meng voor de vulling de citroenschil,
het citroensap en het maïszetmeel.
Breng het water in de kookpot aan de
kook. Voeg het citroen-zetmeelmengsel
toe en laat het geheel al roerend zacht‐
jes doorkoken, totdat er een dikvloeiba‐
re saus ontstaat. Voeg de suiker en de
eidooiers toe en breng het geheel
zachtjes aan de kook. Haal het mengsel
vervolgens van de kookplaat en laat het
afkoelen.
Rol het deeg uit en doe het in de taart‐
vorm. Vul de vorm met de citroencrème
en strijk de massa glad.
Verdeel het met suiker stijfgeklopte ei‐
wit gelijkmatig over de citroencrème en
bak de taart goudbruin.
