Auberginen-Moussaka
Zubereitungszeit: 100–110Minuten
für 6Portionen
Zutaten
1250g Auberginen
50ml Olivenöl
1Zwiebel, gewürfelt
30g Butter
750g Hackfleisch
125ml Weißwein
1Dose Tomaten (Abtropfgewicht 480g)
2EL Petersilie, gehackt
Salz
Pfeffer
3EL Paniermehl
2Eiweiß
500ml Béchamel-Soße
2Eigelb
Zum Überbacken
100g Gouda, gerieben
Zubehör
Auflaufform 20x30cm
Zubereitung
Auberginen in ca. 1cm dicke Scheiben
schneiden, mit Salz bestreuen und ca.
20Minuten ziehen lassen.
Zwiebel in Butter andünsten, Hack-
fleisch zugeben und unter Wenden an-
braten. Die etwas zerkleinerten Tomaten
einschließlich Petersilie und Wein zuge-
ben. Mit Salz und Pfeffer kräftig würzen
und ca. 15Minuten schwach kochen
lassen. Paniermehl und Eiweiß unter-
mengen.
Auberginenscheiben mit Wasser kurz
abspülen, abtupfen und im Olivenöl
goldgelb anbraten.
Die Auflaufform mit der Hälfte der Au-
berginen auslegen, Fleisch-Tomaten-
Mischung daraufgeben. Restliche Au-
berginen auflegen. Eigelb und zwei Drit-
tel des Käses mit der Béchamel-Soße
verrühren. Die Soße auf die Auberginen
streichen, mit dem restlichen Käse be-
streuen und offen goldgelb backen.
