1 rode ui
125 g chorizo (Spaanse salami)
1 courgette
100 g kalamata-olijven (zwart), zonder
pit
2 ¹/₂ eetlepel olijfolie
1 blik (400 g) gehakte tomaten
375 ml kippenbouillon
200 g arboriorijst
30 g boter
50 g Parmezaanse kaas, geraspt
2 eetlepels peterselie, gehakt
2 eetlepels bieslook, gehakt
60 g geitenkaas
50 g basilicum, geplukt

Bereiding
Pel de ui. Snijd de ui, de chorizo en de
cour
gette in fijne blokjes. Hak de olijven
fijn. Doe de ui, de chorizo en de olijfolie
in de ovenschaal en laat het geheel
gaar worden.
Voeg de tomaten, de bouillon en de rijst

oe en zet de bereiding voort.
Voeg de courgette toe, roer alles goed
om en z
et de bereiding voort.
Laat de risotto na de bereiding 2 minu‐
t
en trekken. Voeg dan de boter en de
Parmezaanse kaas toe. Roer voor het
opdienen de peterselie, de olijven en
het biesloo
k erdoor. Garneer het ge‐
recht met geitenkaas en basilicum.
