1 keukenklare kalkoen (ca. 3500 g)
Zout
Zure room of crème fraîche
Maïzena
Ingrediënten vulling
30 ml olie
3 uien, in blokjes (150 g)
125 g rijst
150 g pistachenootjes
150 g rozijnen
2 eetlepels madeira
Ingrediënten saus
125 ml room
125 ml bouillon
3 eetlepels lichte sauzenbinder

Glazen schaal
Bereiding
Bereid de rijst. Sprenkel de madeira
over de r
ozijnen. Fruit de in blokjes ge‐
sneden ui in olie. Voeg de rijst, de pista‐
chenoten en de madeira-rozijnen toe en
meng het geheel.
Vul de voorbereide kalkoen met de vul‐
ling
. Wrijf de kalkoen van buiten met
zout in en leg het vlees met de borst
naar beneden op de glazen schaal.
Keer het vlees na ca. 60 minuten om en
gie
t er vet overheen. Besprenkel de kal‐
koen tijdens het braden om de 30 minu‐
ten met de vrijkomende fond.
Maak een saus van fond, water, zure
r
oom of crème fraîche en voorbereide
maïzena. Breng de saus op smaak.
