Chocoladegebakjes
(Oostenrijk)
Ingrediënten voor ongeveer 7
porties:
70 g boter
70 g suiker
4 eierdooiers
70 g donkere chocolade, gesmolten
70 g fijngehakte amandelen
20 g paneermeel
4 eiwitten
7 vormpjes (C6 cm)
500 ml vanillesaus
200 ml stijfgeklopte room

Poedersuiker
Bereiding:
1. Klop de boter romig met de suiker en
de eierdooiers. Roer de wat afgekoelde
chocolade, de amandelen en het
paneermeel erdoorheen. Meng de
stijfgeklopte eiwitten er losjes
doorheen.
2. Verdeel het mengsel over de
ingevette vormpjes. Plaats de vormpjes
op de met 750 ml water gevulde
universele plaat en laat ze onafgedekt
garen.
3. Meng de room met de vanillesaus en
giet een sausspiegel op dessertborden.
Giet er telkens een beetje
chocoladesaus bij en teken met een
houten stokje een decoratief patroon in
de saus.
4. Maak de gebakjes met een mes los
van de rand van de vormpjes en plaats
op elk dessertbord een gebakje.
Bestrooi ze met poedersuiker en
serveer ze lauwwarm.
