Chocolademuffins met kersen
Ingrediënten voor ongeveer 12
porties:
Deeg:
100 g mokka- of pure chocolade
100 g boter
3 eieren
80 g poedersuiker
1 pakje cappuccinopoeder (10 g)
100 g bloem
1 theelepel bakpoeder
Vulling:
200 g kwark
70 g poedersuiker
1ei
10 g bloem
200 g zure kersen (bokaal)
12 muffinvormen (C ongeveer 7 cm)
Bereiding:
1. Smelt de chocolade (3 minuten in de
microgolfoven op 450 watt).
2. Klop de boter romig en doe
achtereenvolgens afwisselend de
eieren en de suiker erbij. Alles dooreen
mengen. Doe de intussen enigszins
afgekoelde chocolade, het
cappuccinopoeder en de met
bakpoeder vermengde bloem erbij.
Alles dooreen mengen.
3. Om de vulling te maken, mengt u de
kwark met de poedersuiker, het ei en
de bloem. Laat de zure kersen
uitlekken.
4. Verdeel de helft van het
chocoladedeeg over de vormpjes en
doe de helft van de zure kersen erop.
Vervolgens doet u het kwarkmengsel
erbovenop. Verdeel de rest van het
chocoladedeeg en de rest van de
kersen over de vormpjes. Bak de
muffins. Eventueel kunt u het geheel
met donker of bleek chocoladeglazuur
versieren.

Temperatuur: 150-170 °C
Inschuifniveau: 2de van onderen af
Baktijd: 40-50 minuten
"Boven-onderwarmte"
Temperatuur: 160-180 °C
Inschuifniveau: 2de van onderen af
Baktijd: 40-50 minuten +
voorverwarmen
Tip
In plaats van muffins kunt u er ook een
taart van maken in een springvorm.
Verdubbel hiertoe de hoeveelheid fruit
en verleng de baktijd tot ongeveer 50
minuten. De temperatuur blijft
hetzelfde. U kunt de zure kersen ook
door abrikozen vervangen.
