Préparez le poisson frais comme d'ha‐
bitude, écaille
z-le, videz-le puis net‐
toyez-le.
Surgelés
Ne décongelez pas complètement le
poisson
avant cuisson. La surface doit
juste être assez tendre pour absorber
les épices : prévoyez 2 à 5 minutes sui‐
vant l'épaisseur.
Préparation
Versez quelques gouttes de jus de ci‐
tr
on jaune ou vert sur le poisson afin de
l'acidifier légèrement avant cuisson.
Ne salez pas le poisson. En effet, la
cuisso
n vapeur préserve la plupart des
sels minéraux. Le poisson conserve
ainsi tout son goût.
Plats de cuisson
Enduisez un plat perforé avec du beurre
ou de l'huile.
Niveau de cuisson
Quand vous faites cuire du poisson
dans un plat per
foré en même temps
que d'autres aliments, placez-le juste
au dessus du plat récupérateur afin
d'éviter que l'eau qui s'écoule altère le
goût des aliments préparés simultané‐
ment dans le four vapeur.
