Vous pouvez faire mariner vos vian‐
des maigres ou les enduire d'huile.
N'utilisez pas d'autres graisses de
cuisson : elles noircissent vite ou dé‐
gagent de la fumée.
Coupez les saucisses en biais avant
de les mettre à griller.
Utilisez les mêmes épaisseurs de
tranches de viande ou de darnes de
poissons, pour que les temps de
cuisson des grillades ne soient pas
trop différents.
Si la grosse pièce de viande que
vous avez préparée est bien dorée en
surface mais pas cuite à cœur, pour‐
suivez la cuisson en réduisant la tem‐
pérature et en descendant éventuel‐
lement la pièce d'un niveau de cuis‐
son.
Pour vérifier où en est la cuisson, ap‐
puyez sur la viande avec le dos d'une
cuillère :
- si la viande est encore très élasti‐
que, cela signifie qu'elle est rouge
à l'intérieur ("bleu")
- si la cuillère s'enfonce un peu, la
viande est rouge à l'intérieur ("sai‐
gnant")
- si la cuillère s'enfonce à peine, la
viande est cuite à point.
