Extraction de jus
Grâce à votre four vapeur, vous pouvez
extraire le jus des fruits moelleux ou lé-
gèrement fermes.
Il convient de prendre des fruits très
mûrs, car plus il est mûr, plus le jus est
abondant et parfumé.
Préparation
Triez et lavez les fruits ou légumes dont
vous souhaitez extraire le jus. Retirez
toutes les parties abîmées.
Retirez les tiges des raisins et des ce-
rises car elles contiennent des substan-
ces amères. Il n'est pas nécessaire de
retirer les tiges des fruits rouges.
Coupez les grands fruits comme les
pommes en dés d'environ 2cm
d'épaisseur. Plus le fruit ou le légume
est dur, plus il doit être coupé finement.
Conseils
Pour équilibrer le goût de vos jus,
pensez à mélanger les fruits sucrés et
les fruits acides.
La plupart des fruits donneront plus
de jus et leur arôme sera encore su-
blimé si vous ajoutez un peu de sucre
puis les laissez ensuite reposer
quelques heures. Nous vous
conseillons les proportions sui-
vantes: 1kg de fruits sucrés pour 50
à 100 g de sucreet 1kg de fruits
acides pour 100 à 150g de sucre.
Si vous souhaitez conserver le jus
des fruits, versez-le encore chaud
dans des bouteilles propres puis fer-
mez-les aussitôt.
Extraction de jus
Déposez les fruits ainsi préparés
dans un plat de cuisson perforé.
Pour récupérer le jus, placez en des-
sous un récipient de cuisson non per-
foré ou un plat récupérateur ou un
plat en verre (selon modèle).

Durée: 40 à 70minutes
