Verse groenten
Bereid de groenten zoals gebruikelijk voor: was de groenten,
maak ze schoon en snij ze in stukken.
Diepgevroren groenten
Diepvriesgroenten moeten niet vooraf worden ontdooid. Uit
-
zondering: groenten die in een blok zijn ingevroren.
Diepvriesgroenten en verse groenten met dezelfde berei
-
dingstijd kunnen samen worden bereid.
Snij grote, aaneengevroren stukken in kleinere stukken. De
bereidingstijd vindt u op de verpakking.
Stoomovenpannen
Levensmiddelen met een kleine doorsnede (bijv. erwten en
asperges) vormen nauwelijks holle ruimten. Zo kan de stoom
er nauwelijks binnendringen. Om een gelijkmatig
gaarresultaat te verkrijgen, gebruikt u voor deze levensmid-
delen platte stoomovenpannen en vult u deze niet hoger dan
3-5 cm. Verdeel grotere hoeveelheden over meerdere platte
stoomovenpannen.
U kunt verschillende soorten groenten met dezelfde berei
-
dingstijd in één stoomovenpan bereiden.
Groenten die in vocht worden bereid, zoals rode kool, bereidt
u in stoomovenpannen zonder gaatjes.
Inschuifniveau
Wanneer u groenten die kleur afgeven (bijv. rode bieten) in
stoomovenpannen met gaatjes bereidt, mag u geen andere
levensmiddelen daaronder plaatsen. Zo vermijdt u verkleu
-
ring door afdruipend vocht.
