Príprava
Rozrežte tekvicu na polovicu a odstráňte dreň. Ošúpte ju a nakrájajte na malé
kocky. Odvážte kocky tekvice a umyte ich. V miske ich prelejte zriedeným octom
(na 2 kg drene tekvice 1/2 litra octu a 1 liter vody). Nechajte v ňom kocky tekvice
stáť 12 hodín. Na ďalší deň vypustite vodu a tekvicové kocky dobre osušte.
• Pripravte nálev:
1/4 litra vínneho octu, 1 kg cukru, šťava a kôra z 1 citróna, 1 kus nakrájaného čer-
stvého zázvoru - alternatívne 1/2 čajovej lyžičky zázvorového prášku, 1 tyčinka
škorice, niekoľko klinčekov (asi jedna plná polievková lyžica, prípadne mleté).
Nálev zavarte a povarte v ňom kocky tekvice tak, aby nadobudli sklený vzhľad.
Nalejte tekvicové kocky do zaváracích pohárov. Nechajte nálev ešte raz zavariť a
zhustnúť. Nalejte ho na kocky tekvice a zatvorte poháre. Zaváracie poháre naplň-
te iba do 1/3!
Varte tekvicu v zaváracom hrnci pri teplote 90 °C po dobu asi 30 minút.
15.3. Karamelové hrušky
Prísady
1,5 kg hrušky (tvrdé/zrelé)
150 g cukor
750 ml voda
Príprava
Ošúpte hrušky. Nakrájajte ich na štvrtiny a odstráňte jadro.
V panvici skaramelizujte cukor. Do panvice nalejte vodu a varte, kým sa cukor ne-
rozpustí.
Vložte hrušky do pripravených pohárov.
Do pohárov nalejte karamelovú šťavu tak, aby boli hrušky zakryté. Po okrajoch
pohára nechajte trochu miesta a poháre dobre zatvorte.
Hrušky varte v zaváracom hrnci pri teplote 90 °C po dobu asi 30 minút.
15.4. Jahodový džem
Z jahôd odstráňte stopky a umyte ich. Jahody roztlačte na pyré. Posypte ich že-
lírovacím cukrom 1: 1 (1 000 g cukru na 1 000 g jahôd). Nechajte ich jednu noc
postáť a premiešajte.
Naplňte zaváracie poháre jahodami (iba do 2/3) a poháre dobre zatvorte.
Jahody varte v zaváracom hrnci pri teplote 80 °C po dobu asi 25 minút.
