Voorbereiding: 25 min
Stoomtijd: 60 min op 100°
Voor 4 personen
2 aubergines
1 rode paprika
1 groene paprika
2 courgettes
4 grote tomaten
3 grote uien
3 knoflookteentjes
2 takjes tijm
2 takjes rozemarijn
4 eetl. olijfolie
De groenten wassen. De zaadlijsten uit de
paprika's verwijderen. De aubergines, paprika en
courgettes in blokjes snijden. De knoflook en de ui
schillen en fijnhakken.
Doe een liter water in het reservoir van de
stoomkoker. Verdeel de aubergines en de paprika
in de stoomschaal, leg het deksel erop en laat 15
min. stomen. Leg de courgettes in de andere
stoomschaal en plaats deze na 5 min. op
de onderschaal. Voeg 3 min. voor het einde van
de bereidingstijd de hele tomaten toe. Na het
verstrijken van de stoomtijd laten uitlekken.
De tomaten in koud water laten schrikken, het vel
en de pitjes verwijderen en ze in stukken snijden.
In een braadpan de ui met de knoflook 5 min. in
de olijfolie zachtjes fruiten. De aubergine en
paprika toe voegen en 10 min. op laag vuur laten
stoven.
De courgettes en de tomaten toevoegen, met
zout en peper bestrooien en kruiden met tijm en
rozemarijn. 30 min. met het deksel op de pan laten
stoven. Warm of koud opdienen.
Op deze manier bereid is de ratatouille bijzonder
smakelijk en bevat geen overtollig vocht.
