1. Doe de in stukken gesneden zalm in de mini-kom. Druk 2 keer op PULSE en
laat de machine dan 1 minuut draaien.
2. Roer het rijstmeel* en de melk in een pannetje op laag vuur tot een papje.
3. Voeg dit met de eierdooiers, de ketchup, de wodka, de Cayenneper, peper en
nootmuskaat toe aan de zalmpuree.
4. Goed mengen.
5. Verwarm de oven voor op 150 °C (th. 5).
6. Klop de eiwitten gedurende 5 minuten stijf in de kom met de eiwitklopper,
nadat u eerst de aanduwer heeft verwijderd.
7. Beboter de ovenschaaltjes. Bestuif ze licht met meel.
8. Schep de stijfgeslagen eiwitten met de spatel voorzichtig door het zalmmengsel.
Vul de ovenschaaltjes voor ¾ met het mengsel. Ga met een mes langs de
binnenwand van de schaaltjes.
9. Bak de soufflés in de hierboven opgegeven tijd gaar en serveer ze onmiddellijk.
