01. Nella mini bacinella, mettere il salmone affumicato tagliato a pezzi. Dare 2
impulsi e avviare per 1 minuto. Mettere da parte.
02. Mescolare la crema di riso e il latte in un pentolino su fuoco lento.
03. Fuori dal fuoco, incorporare il salmone nel pentolino e mescolare bene.
04. Incorporare al purè di salmone i tuorli, il ketchup, la vodka, il peperoncino, il
pepe e la noce moscata.
05. Mescolare bene.
06. Preriscaldare il forno a 150 °C (termostato 5).
07. Nella bacinella con lo sbattitore, montare gli albumi a neve per 5 minuti
ricordandosi di togliere il pressino o il coperchio.
08. Imburrare e infarinare degli stampini.
09. Incorporare gli albumi alla preparazione con la spatola. Suddividere la
preparazione riempiendo gli stampini fino a 3⁄4. Infilare la lama di un coltello
tra la parete dello stampo e il soufflé.
10. Mettere in forno il tempo indicato sopra e servire subito.
