FLØDESKUM
20 cl øde fedtprocent 35%, 20 g stødt melis eller 20 g ormelis og 1 brev vanillesukker.
Et godt tips til at få en lækker fast ødeskum :
Brug kold øde fra køleskabet.
Gode tips til at få lækre faste mayonnaiser :
- Brug ingredienser, der har stuetemperatur.
- Rengør skålen og skiven med koldt vand.
- Overhold mængdeangivelsen for ingredienser i hver enkel opskrift.
Anbring skiven til emulgering i skålen. Hæld ingredienserne i. Lås låget fast. Start apparatet
med kontinuerlig hastighed og mix i 30 sekunder for at få en fed creme og i ca. 1 minut for at få
ødeskum.
Bemærkning : Check blandingens konsistens efter 45 sekunder. Hvis De mixer for længe, bliver
blandingen til smør.
Mayonnaise med sennep
Anbring skiven til emulgering i skålen.
Hæld ingredienserne i : 1 æggeblomme, 1 spsk sennep, 1/2 spsk vineddike, salt, peber, 3 spsk olie.
Lås låget fast. Start apparatet og mix i 15 sekunder. Tilsæt ca. 30 ml olie. Start apparatet igen og
mix med kontinuerlig hastighed i ca. 20 til 50 sekunder.
Pandekagedej
Til 0,4 l dej :
80 g mel, 2 æg, 1/2 tsk nt salt, 150 ml mælk, 1 tsk olie, krydderier.
Kom alle ingredienser i skålen og mix indtil der fås en homogen dej, omkring 10 til 15 sekunder.
Vaffeldej
80 g mel, 5 g bagepulver, 1 æg, 120 ml mælk, 35 g smeltet smør, 1 spsk vanillesukker.
Rør bagepulveret ud i en smule lunkent vand. Kom alle ingredienser i skålen og mix indtil dejen er
godt lind, omkring 15 til sekunder. Lad dejen hvile 1 time.
Mayonnaise uden sennep
Følg samme fremgangsmåde som for mayonnaise med sennep, men erstat sennep med 3 spsk
citronsaft. Hvis De ønsker en større mængde mayonnaise, kan De tilsætte olie (ca. 30 ml) og mixe i
yderligere 15 sekunder.
