Ingredients:
150 g flour
1 pinch baking powder
75 g sugar
75 g butter
1 egg
For the topping:
50 g butter
100 g sugar
3 eggs, separated
2 tsp. lemon juice
500 g quark
50 g raisins
1 tbsp. wheat semolina
Tableware:
Preparation:
1. Mix the wheat, sifted baking powder and sugar, and
distribute small knobs of butter on top. Add the egg and quickly
mix everything together to form a dough. Store in a cool place.
2. Cover a flan dish with baking paper, add the dough, press
up around the edges and prebake
} 180 - 190 °C 10 - 15 mins
3. For the coating whip the egg whites until sti. Mix the
butter, sugar and egg yolk to form a frothy mixture. Mix in
the quark, lemon juice, raisins and semolina.
4. Fold the egg whites into the quark mixture and pour into
the pre-prepared baking trays, then bake.
} 180 - 190 °C 60 - 70 mins or
} 180 °C in microwave on medium setting for 30 - 35 mins.
5. After baking, leave to set in the switched-o appliance
for 5 - 10 mins.

Wholewheat shortbread biscuits

Ingredients:
1 egg
1 egg yolk
100 g honey
1 tbsp. vanilla sugar
75 g ground hazelnuts
200 g wholemeal flour
Tableware:
Preparation:
1. Mix the butter, egg yolk, honey and vanilla sugar to form
a frothy mixture, fold in the flour and nuts and allow the
dough to set for 30 mins. at room temperature.
2. Place the dough in a piping bag with a wide spout or into
an icing syringe and pipe the mixture onto a flat baking tray,
then bake.
} 170 - 190 °C 18 - 20 mins.
