Ingredients:
2 trout (each approx. 300 g)
1 large onion
125 ml water
125 mL vinegar
Salt
1 bay leaf
Some mustard seeds
Juniper berries
Peppercorns,
Sage leaves
1 to 2 lemon slices
Tableware:
Preparation:
1. Clean the trout, wash them out, and place them into the
glass mould. (The trout can also be tied round by using a
needle and thread to bind the lower jaw to the tail fin.)
2. Peel the onion, cut it into rings and pour it over the trout
together with the water, the vinegar, a little salt, and the
spices. Cook while covered, turn over after one half of the
time.
} Microwave oven max. setting, 6 to 9 min
3. Let it simmer for 2 to 3 min. Decorate with parsley and
serve with boiled potatoes and horseradish sauce.

Ingredients:
450 g rose fish fillet
2 to 3 tbsp. of lemon juice
1 onion
2 beef tomatoes
1 tbsp. olive oil
2 garlic cloves
Salt
Pepper, coarsely ground
2 tbsp. herbs of the
Provence
1 to 2 stalks of basil
Tableware:
Preparation:
1. Clean the fresh fish, let the deep-frozen fish thaw a little,
sprinkle with lemon juice.
2. Finely chop the onions, cut the tomatoes into small
pieces, and steam with the crushed garlic cloves in oil.
} Microwave oven max. setting, 2 to 3 min
3. Place the fish fillet so onto the vegetables that the thin
parts overlap. Add the spices, cook covered. Turn the fish
fillet after one half of the time.
} Microwave oven max. setting, 7 to 8 min
4. Simmering time, 3 to 5 min. Serve with white bread.
