6 Introduction
Important information
} What are microwaves?
Microwaves are electromagnetic waves, similar to radio waves and TV waves. Their cooking
power is derived from causing the smallest components of the food, especially the fat and
water molecules, to vibrate, so that the molecules rub against each other. This friction
causes heat that is so powerful that the food is cooked in a very short time.
The microwaves are generated in the magnetron, the heart of any microwave appliance, a
high-frequency tube sending out waves. The microwaves are fed into the cooking space via
a metallic duct, and there they are distributed uniformly to the food to be cooked with the
aid of the turntable.
} What are the properties of microwaves?
Microwaves travel in a straight line though space. They pass unimpaired through materials
like glass, china, ceramics, plastics, and paper, and they can be received by food, i.e. they can
act directly onto the food. It is not necessary to heat the tableware first. Microwaves are
reflected by metal surfaces. This means that metal shields against microwaves.
} Are microwaves dangerous?
Microwaves are relatively long waves, as have been used for decades for medical heat
treatment. The microwaves are shielded from the environment by the metal housing, so that
they cannot leave the cooking space during cooking or when the door is opened. A double
safety system shuts o the microwaves immediately when the appliance is opened.
Changes to the food from microwaves with a damaging eect on health could not be found
through extensive scientific investigations and decades of observation. Just the opposite
- with correct operation, the microwave oven can oer a valuable contribution to healthier
nutrition. A microwave appliance is subject to a number of legal regulations and tests.
KOENIC microwave appliances are tested and checked by accredited test institutes.
} How is the microwave oven regulated?
As with other electrical equipment and hobs, you can select an operating time and dierent
power levels with the microwave oven. A timer or an electronic clock automatically turns the
appliance o when the set cooking time has elapsed.
In contrast to conventional cooking methods, the power and the time setting play a larger
role, as the microwaves heat the food directly. Thus, the selection of the correct power
setting and time is key for good cooking or thawing results.

} Automatic programs
Electronic appliances are frequently equipped with automatic programs that facilitate the
operation of and cooking with a microwave oven. Depending on the program, the end of
the cooking time is calculated based on the weight. You can find further details in your
operating instructions.
} What does a 2 in 1 or microwave oven with grill mean?
With 2 in 1 microwave ovens, the microwave is combined with grill heating elements. This
means that the device has two functions. Depending on the device type, the two types of
heating can be used individually (single mode), successively or simultaneously (combined
operation). With this, the food can quickly be cooked and browned at the same time. Grill
and microwave power can be chosen freely or be installed in the form of a solid program.
Please refer to the instruction manual for more information on the type of equipment and
its operation.

8 Introduction
Important information
} Advantages of use
} Thawing
The microwave oven permits easy and quick thawing of food. When you thaw and cook in
one operation, you save much time and energy.
} Warming / Melting
Certain foods only have a typical aroma when at the right temperature. Thus you can
bring cheese or red wine to room temperature in a few seconds on a medium setting in
the microwave oven. Butter becomes spreadable and yogurt or drinks lose the icy cold of
the refrigerator. Ice cream can be scooped more easily into balls. Salad dressing develops
its aroma only when slightly warmed, and chocolate, butter, or cheese can be melted with
marvelous ease.
} Heating of liquids
A microwave oven lets you quickly heat a cup of milk or cocoa for breakfast, water for a cup
of tea, coee that has become cold, a glass of mulled wine, or broth.
} Warming / Reheating
Prepared meals taste like freshly cooked when heated in a microwave oven. This is
especially practical when the members of the family eat at dierent times. Reheated food,
overcooked food and food kept warm for hours are now a thing of the past.
} Cooking
Cooking in a microwave oven approximately corresponds to conventional steaming or
cooking in water or in a water bath. However, the large dierence is that hardly any water
or fat is required, as the food is cooked in its own juice. Vitamins, minerals, color, and aroma
cannot be washed out or overcooked. Also, cooking without fat means saving many calories.
} Less work
With a microwave oven, the food is cooked in the serving tableware. There are fewer dirty
dishes. No more dirty pots that have to be washed by hand. Full use of a dishwasher is
possible. The microwave oven does not become very dirty and can be cleaned more easily.

Introduction 9
Tableware
} Suitable tableware
The requirements of a microwave oven for the cookware are dierent from those of a
conventional range. A microwave oven lets you cook in glass and china, but is not compatible
with metal.
As high temperatures can occur while cooking food, the cookware should have a
corresponding temperature resistance. Heat-resistant glass, china, ceramics, and heat-
resistant plastics are ideal. However, your everyday tableware can also be used if it is
dishwasher-safe and undamaged.
} The cookware test
If you are not quite sure whether a container is suitable for microwave cooking, do the
cookware test. Heat the empty cookware for approx. 20 seconds at the max. setting. If
it remains cold or only slightly warm, it is suitable. If it becomes warm and sparks are
generated, it may not be used.
} Tableware made of metal or containing metal is prohibited!
Accordingly, pots or pans made of steel, stainless steel, copper, cast iron, or enamel as well
as cans, are not permitted. This also applies to tableware with gold or silver edges or other
decorations and admixtures (lead crystal). Metal reflects microwaves, and sparking and
damage to the appliance may be caused. Exceptions are metallic accessories like turntable
or grills.
} Glass and china
are especially suited to a microwave oven. Glass allows microwaves to pass through
unimpaired and has the advantage that the cooking process can be observed. Very fine
glass or china should not be used, as can break with hot food. Glasses with a screwed metal
lid and bottles with a narrow neck are not suitable.
} Glass ceramics
are easily penetrated by microwaves and are compatible with high temperatures and
temperature dierences.
} Earthenware, ceramics, clay
are well suited, but should be glazed and have no cracks. The reason for this is that liquid
in fine cracks can have a “bursting” eect when heated. When buying, look out for the label
“suitable for microwave use” or do the cookware test.
} Plastics
If plastics are used in a microwave appliance, special attention must be paid to the
temperature range. The temperature-resistant, special microwave cookware that can be
used for deep-freezing, heating, and cooking are ideal. Some plastic cookware can even be
used in a baking oven. However, conventional deep-freeze containers are suitable only for
brief heating to eating temperatures.
KOENIC_Grill_Recipe_141106.indb 9 6/11/14 9:42 AM
10 Introduction
Tableware
} Plastic foil
must be temperature-resistant and vapor-permeable. Accordingly, the metal clips of cooking
bags or oven bags must be replaced by rubber bands or string and one or two holes must be
punched to let the steam escape. Cling film is not suitable for cooking. Special microwave
foil should be used.
} Wood, wicker
Wooden bowls or cutting boards should not be put into a microwave oven. They dry out and
crack. Baskets should also be heated only for a short time.
} Aluminum bowls/foil
In the case of aluminum bowls and other packaging of TV dinners you should always follow
the manufacturer’s specifications, and in case of doubt, you should refill into microwave-
safe cookware. Heating in aluminum bowls is possible if these are no higher than 3 cm and
the lid was removed. Also, the aluminum bowl in no case must never be in contact with
the wall of the cooking space or a second aluminum bowl. However, the cooking time is
increased by several minutes as the microwaves can penetrate the food only from the top.
When thawing, aluminum foil can protect food from overheating, but it must be at least
3cm away from the wall of the cooking space.
} Shape and size
The capacity should be selected so that the dishes are only filled to 2/3. Flat, round, and
oval shapes allow better penetration of the microwaves than high shapes with a small
diameter. With square shapes, the microwaves readily concentrate at the corners, so that
the food there is easily overcooked.
The following table provides an overview of which dishes are suitable for which use.

12 Introduction
Thawing
} Thawing in minutes
A microwave oven permits very rapid defrosting of deep-frozen food. Waiting for hours and
advance planning are a matter of the past. Now you can access your reserves in the freezer
quickly when unexpected guests arrive or when you could not go shopping.
} Which setting is correct?
The special defrosting setting defrosts raw food gently. The following applies: the lower the
power, the slower and gentler the defrosting. You can find guide values for the defrosting
times in the defrosting table. The kg scale on the timer switch helps in determining the
correct defrosting time.
For appliances with automatic defrosting, the appliance itself determines the defrosting
time from the type and weight of the food. When the frozen food also needs to be cooked or
heated, the max. setting can be used.
} Practical tips:
} Consider the defrosting already at the time of freezing. Portion the goods to be frozen
according to their container size. Flattened packages of 250 g can be defrosted best.
Prefreezing of fruit and vegetables allows removal of portions at a later time.
} The frozen goods can be removed more easily from their packaging when it is defrosted
partially for 1/2 to 1 minute at max. setting. Remove metal clips in advance. In the case of
freezing boxes which are also suitable for heating and cooking, remove the lid. Otherwise,
refill the food into dishes suitable for microwaving.
} Distribute the foods as uniformly as possible in the cooking space. Arrange food with
unequal thickness, like whole fish or chicken legs, so that the thicker parts are on the
outside. A reversed saucer or a special defrosting grate keeps the food from lying in the
discharged liquid.
} Small quantities thaw easier than large ones. Turn over compact pieces like meat or bread
several times. When possible, divide the block after one half of the defrosting time or
remove already thawed parts (for example, minced meat). Stir liquid food like soups and
stews once or twice.
} Do not let food thaw to the core. A rest period outside the appliance lets the frozen goods
thaw completely. (Rule of thumb: 10 min)
} Food with a low moisture content, like bread or rolls, quickly loses its moisture while
thawing. Accordingly, do not set the time and the power too high. There is a risk of fire.
} Carefully discard any thawing liquid when defrosting minced meat, poultry, or fish.
Process thawed food quickly. Rinse cutting boards, knives, etc. immediately after use with
hot water.

14 Introduction
Warming, heating
} Warming to room temperature
} Set the appliance only for very short heating times and a medium or low power level. The
food rapidly reaches room temperature. Overheating can be disastrous for cheese, butter,
or ice cream.
} Heating of liquids
} Never use delicate glasses or cups that cannot withstand higher temperatures to heat
liquids.
} A glass rod or a metal or plastic spoon in the cup prevents so-called boiling retardation,
where the liquid evaporates instantaneously at the time of removal. With the aid of the
spoon, the boiling bubbles can develop slowly and can rise along the spoon.
} Before drinking, you should stir the liquid to get rid of temperature dierences. Do not try
to test the temperature with your mouth. Often, the liquid is hotter than the container
seems to indicate.
} High-proof alcoholic beverages may not be heated excessively, as they may ignite.
} Reheating of prepared food
} Place the prepared food or leftovers immediately after cooking into the refrigerator. In
this way, the vitamins are preserved longer. If you use the serving dishes for this, you do
not have to change containers at a later time.
} Arrange the various components of a one-course meal as flat as possible. Place thick parts
like chicken legs on the outside and susceptible parts on the inside.
} Cover the food for heating. In this way the food heats more uniformly and does not dry
out. Reversed plates, microwave foil, parchment paper, or special covers are suitable for
covering.
} Do not cover food with a crispy outer layer, like breaded cutlets, grilled chicken, or
gratinated food, so that the crust is not softened too much. Brushing the surface with oil
or liquid butter keeps it crispier.
} Moisten stew and side dishes like mashed potatoes, rice, noodles, and vegetables with a
small quantity of liquid. Pour sauce over meat.
} Stir larger quantities once or twice during heating.
} The heating times listed in the following table can only be guide values, as the time
depends to a large degree on the initial temperature and the composition of the food.
Thus it is recommended to check from time to time whether the food is already hot
enough.

16 Introduction
Warming, heating
} Baby food
A microwave oven facilitates the preparation of food for babies and small children
considerably. Small portions of vegetables, compote, or mash can be produced quickly and
ready-made food can be heated. However, you should check the temperature carefully
with a thermometer or by tasting, just as with conventional cooking. Please note that the
consumption temperature for infants is only 37 °C.
} Remove the lid and heat the contents of the glass or a portion in a small bowl or plate.
After heating, stir well and check the temperature. Keep unheated leftovers closed and
cool and use them up within 3 days. Use heated leftovers for adult food.
} For boiling water and preparation of milk drinks, it is best to use a microwave-
safe vessel and fill the liquid into the bottle only after heating. Always check the
temperature before you let the child drink from the bottle. For this, apply a few drops to
the inside of your wrist.
} Place a milk bottle with milk or cold tea into the microwave oven without closing it.
Important: In this case also stir or shake well after heating and check the temperature.
} Do not use the microwave oven for sterilization of bottles and nipples. You can check the
boiling time better with conventional methods.

Introduction 17
Cooking
} Practical tips
} Follow the guideline values in the cooking table and the recipes. Observe the cooking
procedure if you have not had much practice. You can open the door of the appliance at
any time. The appliance then turns o automatically. It operates again only when the
door is closed.
} Food out of the refrigerator requires a longer cooking time than food at room temperature.
} More compact food requires a longer cooking time. For example, a larger piece of meat
requires a longer cooking time than the same quantity of minced meat. It is recommended
to start cooking larger quantities initially at max. power and then to continue cooking at
medium power for uniform cooking. Stir while cooking and turn over compact pieces.
} Flat food cooks faster than high food, thus the food should be spread flat as far as
possible. Place thinner parts like chicken legs or filleted fish to the inside or let them
overlap.
} Small quantities cook faster than large ones. The following rule of thumb applies:
Double quantity = nearly double time
Half quantity = half time.
} If you cannot find a matching time listing for a meal, the following rule applies: approx. 1
minute of cooking time per 100 g.
} A lid prevents drying of the food. Reversed plates, microwave foil, baking paper, or special
covers are also suitable for covering. Food which has a crust should be cooked uncovered.
} Add only little or no food while cooking. For vegetables, the remaining water from
washing is sucient in most cases.
} Food with a hard skin like apples, potatoes, or sausages should be pricked with a fork or a
toothpick to prevent bursting.
} Eggs in the shell may not be prepared in a microwave oven as they would burst when
heated. For fried eggs or eggs in a glass, prick the yolk several times before cooking.
} Do not heat food in tightly closed glasses or bottles. The food expands and can burst the
container.
} Heating of larger quantities of cooking oil (deep-frying) may not be done in a microwave
oven.
} After cooking, leave the food for some time in the appliance or at room temperature, the
food will then continue to cook a little. Stir before serving.
} You will need pot holders to remove the dishes even when cooking or heating in a
microwave oven, as the food transfers heat to the dishes.

20 Introduction
Broiling
} What does broiling in a microwave oven mean?
Broiling in a single mode enables rapid and gentle cooking without fat, just like a barbecue.
The powered microwave cooks larger slices of meat and poultry, casseroles and gratins from
the inside, while the grill provides a nice golden-brown colour.
} What kind of food can be broiled?
Thin pieces of meat like steaks, cutlets or sausages, fish or poultry are particularly well
suited for broiling. But also vegetables (onions, tomatoes, peppers, mushrooms, eggplants,
zucchinis) and fruit (apples, bananas, pears, peaches, and pineapples) can be grilled well as
a side dish or a garnish for meat dishes. The grill can, of course, also be used for scalloping
bread or, in conjunction with the microwave for casseroles and gratins of any kind.
} Preparation
Fish and meat taste good when they are covered with a marinade of vegetable oil, spices
and herbs and left aside for a few hours. Salt should only be applied after grilling. Sausages
will not burst if they have been pierced with a fork beforehand.
} Accessories
Depending on the dish, the food can be grilled or baked in a jar on a turntable or scalloped.
Only use the grate together with the turntable, as it can catch the dripping juice.
} Which setting is the correct one?
In the grill table, there are approximate values for grilling dierent types of food. There’s a
rule of thumb: The thinner the food to be grilled, the closer it should be to the grill heating
element and less microwave power is needed.
For compact meat and poultry dishes as well as casseroles and gratins, you need medium
to high microwave power in combination with the grill. It is best to switch on the grill
simultaneously or afterwards, to achieve a crispy crust.
} During and after the grilling
Check the food that is being grilled after half of the grilling time and turn it over or brush it
with oil where appropriate. When broiling grease splashes may touch the radiator and burn.
This is a natural process and not a malfunction. Clean the oven and the accessories after
each cooking process so that no dirt can become engrained.
