Schafskäsesoße
»passt gut zu Vollkornnudeln«
Zubereitung:
1. Schafskäse mit einer Gabel zerdrücken, mit Mehl
und Milch geschmeidig rühren und unter mehrmaligem
Umrühren erhitzen.
` Mikrowelle maximale Stufe 3 - 4 Min.
2. Oliven entsteinen und klein schneiden. Basilikum
waschen, trocken schleudern, fein hacken und unter die
Soße rühren. Kurz erhitzen.
` Mikrowelle maximale Stufe 1 - 2 Min.
` Tipp: Andere Käsearten wie zum Beispiel Gorgonzola
lassen sich auf die gleiche Weise zu Soßen verarbeiten.
Sauce Hollandaise
»ideal zu Spargel oder Fleischgerichten«
Zubereitung:
1. Butter in einem Kännchen schmelzen.
` Mikrowelle maximale Stufe 1 - 2 Min.
2. Eigelb, Zitronensaft, Wasser, Weißweinessig im Koch-
geschirr gut verrühren und anwärmen.
` Mikrowelle niedrige Stufe 2 - 3 Min.
3. Mit dem Schneebesen die Butter tropfenweise in die
Eigelbmischung rühren. Mit den Gewürzen abschmecken
und nochmals kurz erwärmen. Zwischendurch kräftig
umrühren.
` Mikrowelle hohe Stufe ca. 1 Min.
4. Möglichst schnell servieren.
4 Portionen,

100 g Schafskäse
(hohe Fettstufe)
1 Teel. Mehl
125 ml Milch
50 g schwarze Oliven
1 - 2 Stengel Basilikum
