Conservare beef jerky e carne essiccata
Avvolgere la carne essiccata in carta stagnola e conservarla in una spessa busta di
plastica o in un barattolo di vetro con coperchio. Evitare la conservazione in contenitori
o sacchetti di plastica senza previo avvolgimento in carta stagnola o carta oleata. La
carne essiccata deve essere conservata in un luogo buio e asciutto, a temperature tra
10 e 16 °C. La carne essiccata può essere conservata a temperatura ambiente per
1-2 mesi. Per prolungare di 6 mesi la conservabilità, metterla in freezer. Assicurarsi di
segnare e mettere la data su tutte le confezioni.

Marinata hawaiana per carne essiccata
1 cucchiaino di sale 1 cucchiaino di zenzero ¼ di ananas tagliato
1 cucchiaino di zucchero

1 spicchio d’aglio
schiacciato
¼ di tazza di salsa di soia
0,5 kg di carne magra, tagliata a strisce sottili di 0,3-0,6 cm.
Marinata Cajun per carne essiccata
1 tazza di succo di
pomodoro
½ cucchiaino di aglio in
polvere
½ cucchiaino di pepe nero
1 cucchiaino e ½ di timo
secco
1 cucchiaino e ½ di
basilico secco
1 cucchiaino e ½ di
cipolla in polvere e pepe
1 cucchiaino di pepe
bianco
2 cucchiaini di pepe di
Cayenna (o di più, in base
al gusto)
