PREPARATION OF CAPPUCCINO AND OTHER
COFFEE SPECIALITIES
Cappuccino and many other coffee specialities are made from espresso and milk foam.
The process of frothing milk is described below.
Note: The sieve support must be installed before milk froth can be prepared.
1. First prepare espresso and provide a large enough cup for frothing milk.
2. Press STEAM. The STEAM indicator  ashes and indicates that the milk frother is
heating up. As soon as the display stops  ashing, the milk frother is completely
heated.
3. Add the desired quantity of milk to the cup.
4. As soon as some steam or water drops escape from the steam cap, wait brie y to
remove any residual water that has collected in the steam pipe during heating.
5. Lift the cup until the steam cap is 1/3 inside the milk. Turn the steam knob
counterclockwise to MAX and lower the cup slightly so that the steam attachment is
just below the milk surface. The milk is now swirled and milk foam is produced.
6. As soon as enough milk foam has formed, lift the cup up again so that the steam
cap is deep in the foam. Interrupt the steam supply by turning the steam knob back
completely and pressing the STEAM button.
7. Take a large cup or glass and pour the espresso into it  rst. Then add the milk foam.
CAUTION
Danger of scalding! Make sure that the steam attachment is always
below the milk surface. Otherwise hot milk splashing around can lead
to scalding.
Tip: If the bubbles in the milk foam vary in size, knock on the milk cup to remove large
bubbles. Then shake the milk cup horizontally to completely mix the milk and milk foam.
