Masa Dulce básica
3/4 taza (175 mL) de
leche descremada
1/2 taza (120 mL)

levadura para
hornear seca
1/3 taza (80 mL) de
agua tibia (105°F a
115°F [40°C a 46°C])
3 huevos,
temperatura

1,62 mL) de harina

Coloque la leche, el azúcar, la sal y la mantequilla
en una cacerola pequeña. Caliente a fuego lento
hasta que la mantequilla se derrita y el azúcar se
disuelva. Enfríe hasta templar.
Disuelva la levadura en agua tibia en el tazón de
la batidora previamente calentado. Añada mezcla
de leche templada, los huevos y 5 tazas (1,2 L)
de harina. Coloque el tazón y el gancho para
masa en espiral PowerKnead™ en la batidora.
Ponga la batidora en velocidad 2 y bata durante
aproximadamente 2 minutos.
Continúe en velocidad 2, añada la harina
restante, 1/2 taza (120 mL) a la vez y mezcle
aproximadamente 1-1/2 minutos o hasta que la
masa comience a limpiar los laterales del tazón.
Amase en velocidad 2 aproximadamente
2 minutos más.
Coloque la masa en un tazón engrasado
moviéndola para engrasar la parte de arriba.
Tape el tazón. Deje levar en un lugar cálido, sin
corrientes de aire, aproximadamente 1 hora
o hasta que se duplique en volumen.
Aplaste la masa y dé la forma deseada de bollos
o roles de café.
VARIACIÓN

Duplique todos los ingredientes y mezcle en
el tazón de la batidora de 7 cuartos (6,6 L).
En el primer párrafo, cambie la cacerola pequeña
por una cacerola mediana. En el segundo párrafo,
cambie 5 tazas (1,2 L) de harina por 10 tazas
(2,4 L) de harina.
