Meng de bloem, suiker, zout, bakkersgist en gember in een grote
mengkom met behulp van de platte menghaak op snelheid 1
gedurende 30 seconden; zet de kom daarna even opzij. Doe het
water, de melk en de margarine in een middelgrote steelpan.
Verwarm dit op laag vuur totdat het mengsel zeer warm is maar
niet kookt (47°C tot 52°C) en roer daarbij regelmatig. Voeg
dit mengsel toe aan de andere ingrediënten in de kom, voeg
vervolgens de eieren toe en roer het geheel goed om op snelheid
8 gedurende 2 minuten. Dek de kom af met een doek. Laat
tenminste 1 uur rusten op kamertemperatuur tot het beslag licht
en romig wordt en het volume ervan verdubbeld is.
Voeg de bruine suiker, bananen en walnoten toe en meng alles
goed op snelheid 6 gedurende 2 minuten.
Stel de voorverwarmde wafelmachine in op 3 minuut 45.
Schenk 4 scheppen beslag (van 30 ml elk) in de bovenkant van
de wafelmachine. Sluit het deksel; start de timer en draai de
bakeenheid om. Vul de andere zijde van de bakeenheid; draai de
bakeenheid opnieuw om. Verwijder de eerste wafel van zodra het
geluidssignaal klinkt. Draai de bakeenheid en verwijder de tweede
wafel. Ga zo door totdat er geen beslag meer overblijft.
Betrooi met suiker.
