2 tl leivinjauhetta 3 kananmunaa
2 tl ruokasoodaa 250 gr ananasmursketta omassa

2 tl jauhettua kanelia 175 gr pilkottuja, paahdettuja
1 tl jauhettua mausteneilikkaa pekaani- tai saksanpähkinöitä

2 tl jauhettua muskottipähkinää 50 gr kuivattua kookosta
4 rkl kasvisöljyä 250 gr porkkanaraastetta
225 gr hienoa sokeria 175 gr rusinoita
65 gr fariinisokeria 500 gr vehnäjauhoja
2 tl vaniljaesanssia
Kuumenna uuni 180°C. Voitele n. 33 x 25 cm kakkuvuoka. Seulo ensin leivinjauhot vehnä-
jauhoihin, sitten ruokasooda, suola kaneli, fariinisokeri, vanilja kulhoon ja lisää munat. Käytä
vatkainta keskinopeudella ja sekoita öljy, hieno sokeri, fariinisokeri, vanilja ja munat tasaiseksi
seokseksi. Vähennä nopeutta ja lisää joukkoon ananas, pähkinät, kookos, porkkana-raaste ja
rusinat. Sekoita hyvin. Vatkaa hiljaisella nopeudella, kunnes seos on tasainen. Kaada seos
kakkuvuokaan ja paista 40-50 minuuttia. Käännä vuoka ylösalaisin tarjoiluastialle jäähtymään.
Leikkaa 24 osaan. Tarjoile sellaisenaan tai voin kera.
Kuninkaallinen kuorrutus
Kuusi munanvalkuaista
150 gr tomusokeria
Lisää kuusi munanvalkuaista kulhoon.
Käytä vatkainta hiljaisella nopeudella ja lisää tomusokeri varoen sekaan n. 3 minuutin aikana,
lisäten nopeutta asteittain maksimiin.
Kun ainekset ovat sekoittuneet, jatka vatkaamista vielä 45 sekuntia.
Valmiin seoksen määrä riittää kahteen 20 cm pyöreään kakkuun.
