Schärfungsverfahren für Messer mit gezahnter Schneide
Gezahnte Schneiden haben oft einen Wellenschliff oder eine
Reihe von spitzen Zähnen.
Zum Schärfen der gezahnten Messer nur Phase 2 nutzen.
Ziehen Sie das Messer ca. 2 - 6 Mal langsam durch den
linken und rechten Schlitz der Phase 2.
Falls die Messerschneide durch den Gebrauch schwer beschä-
digt wurde, ziehen Sie das Messer nach Bedarf durch den lin-
ken und rechten Schlitz der Phase 1.
Dann ziehen Sie das Messer abwechselnd durch den rech-
ten und linken Schlitz der Phase 2.
Wichtig!
Eine übermäßige Anwendung der Phase 1 wird mehr
Metall entlang der Schneide entfernen als erforderlich,
um die Zähne zu schärfen.

Da es sich bei gezahnten Schneiden um eine sägearti-
ge Struktur handelt, werden die Schneiden niemals so
scharf sein wie die Schneide eines Messers mit einer
glatten Schneide. Die zahnartige Struktur kann effektiv
für faserige Lebensmittel sein oder um die Schale harter
oder krustiger Lebensmittel aufzubrechen.
