Una bassa temperatura permette
condizioni di conservazione ideali
perĂalimenti freschi.
Sono indicati per la
conservazione a 0 °C:
In generale tutti gli alimenti freschi, che
devono restare ancora a lungo freschi,
come:
carni e salumi insaccati, pesce fresco,
frutti di mare, latte, burro, formaggio
tenero, ricotta, verdura e frutta.
Nello scomparto a 0 °C tutto si conserva
sicuramente fresco e per una durata
doppia.
Non sono indicati per la
conservazione a 0 °C:
Frutta e verdura sensibili al freddo,
come:
- frutta tropicale
- avocadi
- papaie
- frutti della passione
- melanzane
- cetrioli
- peperoni
- inoltre frutta da maturare
- pomodori verdi
- patate e formaggio duro.
Il luogo di conservazione ideale per
questi alimenti è il vano frigorifero
(figuraĂ1/A).
Tenere presente
nell'acquisto di alimenti:
Per la durata di conservazione degli
alimenti è importante la «freschezza
all'acquisto» dei prodotti.
In generale vale il principio: quanto più
freschi sono i prodotti conservati nel
vano a 0 °C, tanto più a lungo restano
freschi. Perciò all'acquisto badare
sempre alla freschezza degli alimenti.
Confezionare alimenti
Disporre gli alimenti possibilmente ben
confezionati oppure ben coperti. Così
siĂconservano aroma, colore, umidità
eĂfreschezza. Inoltre si evitano
contaminazioni del gusto. Dovrebbero
essere conservati non confezionati solo
verdura, frutta e insalata, nel cassetto
verdura (figura 1/25).
Per confezionare sono adatti sacchetti
eĂfogli di polietilene, fogli di alluminio
eĂcontenitori di plastica o di alluminio
che si possono chiudere
ermeticamente.
