Desinfecteren
Voor het inmaken moeten de potten in de oven
worden gedesinfecteerd, om bederf tegen te
gaan.Alleen zo kunnen ingemaakte producten
langere tijd en buiten de koelkast worden bewaard.
Lege potten bij 100°C hete lucht minstens
20°minuten desinfecteren. De deksels en rubberen
ringen van de potten kan men tegelijk desinfecteren
in°kokend water, zodat ze bij de droge warmte in de
oven niet uitdrogen.
Drogen
Drogen is een conserveringsmethode waarbij door
toevoer van droge warmte tot 50% vocht wordt
onttrokken aan de levensmiddelen. Tegelijkertijd
wordt de smaak intensiever.
Hoe dikker de levensmiddelen, des te langer duurt
het drogen. Het drogen gebeurt het snelst en meest
energiezuinig wanneer u de levensmiddelen in
plakjes snijdt.
Leg de voorbereide levensmiddelen op een rooster
of een plaat waarop bakpapier is gelegd. Tijdens
het drogen de levensmiddelen af en toe keren.
De duur is afhankelijk van de dikte van de
levensmiddelen en van hun natuurlijke
vochtgehalte, d.w.z. tomaten zijn eerder droog dan
paddestoelen.
Wilt u op twee niveaus tegelijk drogen, gebruik dan
niveau 1en 3(of 2en 4).
