Cuisson saine
Point de fumée des différentes sortes d’huiles
Pour un cuisine saine, Etna conseille d’utiliser une sorte d’huile
convenant à la température de cuisson. Le point de fumée auquel des
gaz toxiques se dégagent diffère selon la sorte d’huile. Le tableau ci-
dessous indique le point de fumée des différentes sortes d’huiles.

Comme les valeurs de réglage dépendent de la quantité et de la
composition du mets et de la casserole, vous ne pouvez utiliser le
tableau ci-dessous qu’à titre informatif.
Utilisez la fonction ‘boost’ et le réglage 9 pour :
ébullition rapide ;
faire revenir des légumes verts ;
chauffer de l’huile et de la graisse ;
amener sous pression une cocotte minute.
Utilisez le réglage 8 pour :
faire revenir de la viande ;
cuire un poisson ;
cuire des omelettes ;
cuire des pommes de terre crues ;
• friture.
