250 g batatas Lave e descasque as batatas, as cenouras, o aipo e a

corte tudo em pedaços. Adicione os legumes
cortados a
1/3 do c
aldo de carne e deixe levantar fervura. Coza
durante 10 minutos.
Deixe arrefecer o caldo com os legumes e, em seguida,
processe
finamente na Velocidade 2. Deixe o restante
caldo de carne levantar fervura numa panela, adicione
o puré de legumes e deixe novamente levantar uma
fervura breve.
Tempere a gosto com o crème fraîche, sal e pimenta.
Decore com as ervas picadas e sirva.

100 g aipo
1 cebola
1l caldo de carne

Sopa fria de tomate
750 g tomates Faça uns cortes em cruz nos tomates e escalde-os
com água quente. Pele os tomates e corte-os em
pedaços grandes. Descasque as cebolas e corte-as
em pedaços.
Coloque os tomates e a cebola na liquidificadora e
processe na Velocidade 2 até obter um puré fino.
Adicione o sumo de limão, o azeite e o vinagre. Tem-
pere a gosto com sal, pimenta e açúcar. Adicione o
crème fraîche.

Creme de cenouras
500 g cenouras Lave e descasque as cenouras e corte-as em peda-
ços. Coza-as em 1/4 l de caldo de legumes, durante
aproximadamente 15 minutos. Deixe arrefecer um
pouco. Processe na Velocidade 2 e, em seguida, volte
a colocar na panela. Adicione o restante caldo e volte
a aquecer a sopa. Adicione o vinho branco e as natas
a gosto.
