Lauwe salade
van pastinaak en koolrabi
Salade tiède de panais
et de chou-rave
· VOOR 4 PERSONEN -
POUR 4 PERSONNES ·
INGREDIËNTEN:
40 g gemengde pitten (pompoen- en
zonnebloempitten en sesamzaadjes)
1 grote koolrabi 2 pastinaken 1 knol-
selder 2 wortelen sesamolie 2 sjalot-
ten, fijngehakt 2 teentjes look, fijnge-
hakt 2 blaadjes laurier 2 el citroensap
gehakte peterselie 80 g alfalfa peper
en zout
BEREIDING:
1. Rooster de pitten en de zaadjes in
een droge pan. 2. Schil de koolrabi,
pastinaak, knolselder en wortel. Snij ze
in slierten en hou ze apart. 3. Giet een
scheutje sesamolie in een wokpan en
fruit de sjalot en de look. 4. Doe daarna
de koolrabi, pastinaak, knolselder, wortel
en laurier in de wok en laat de groentjes
knapperig gaar worden. 5. Voeg op het
einde het citroensap, de pitjes en zaad-
jes (gedeeltelijk) en de gehakte peter-
selie toe. Meng goed en breng op smaak
met peper en zout. 6. Garneer de salade
met de alfalfa en de overgebleven pitjes
en zaadjes.
INGRÉDIENTS :
40 g de mélange de graines (potiron,
tournesol et sésame) 1 gros chou-rave
2 panais 1 céleri-rave 2 carottes
huile de sésame 2 échalotes émincées
2 gousses d’ail émincées 2 feuilles de
laurier 2 c. à soupe de jus de citron
persil haché 80 g d’alfalfa sel et
poivre
PRÉPARATION :
1.
Faites griller les graines dans une
poêle sèche. 2. Épluchez le chou-rave,
les panais, le céleri-rave et les carottes.
3. Découpez-les en spirales et réservez.
4. Dans un wok, versez un filet d’huile de
sésame et faites revenir les échalotes
et l’ail ; puis ajoutez le chou-rave, les
panais, le céleri-rave, les carottes et le
laurier et faites cuire les légumes. Ceux-
ci doivent rester croustillants. 5. À la fin,
ajoutez le jus de citron, les graines (par-
tiellement) et le persil haché. Mélangez
et assaisonnez avec du sel et poivre.
6. Garnissez la salade du reste de
graines et d’alfalfa.
