INGREDIENTS:
100 g mixed roasted nuts (pumpkin
seeds, pine nuts and sesame seeds)
2 apples 2 Chioggia beets 2 red beets
2 yellow beets 100 g rocket 50 g Man-
chego cheese
FOR THE DRESSING:
60 ml olive oil 2 tsp white rice vinegar
fresh herbs: a handful of basil, a couple
of sprigs of tarragon, a handful of pars-
ley 1/2 tsp mustard 1/2 clove of garlic
pepper and salt
PREPARATION:
1. Roast the nuts in a dry pan. 2. Make
strings of the apple and beets. 3. Keep
them separate and set them aside. 4.
Prepare the dressing: put all of the ingre-
dients into a blender and add pepper and
salt to taste. 5. Arrange the rocket on the
plate and then place layers of red beet
with Chioggia beets, yellow beets and
white beets. 6. Dribble some dressing
over and around the tower and place the
cheese slivers and roasted nuts on top.

ZUTATEN:
100 g gemischte, geröstete Kerne (Kür-
bis- und Pinienkerne, Sesam) 2 Äpfel
2 Rote Beete Sorte Chioggia 2 Rote
Beete 2 Gelbe Beete 100 g Rucola
50 g Manchego-Käse
FÜR DAS DRESSING:
60 ml Olivenöl 2 TL weißer Reisessig
Frische Kräuter: eine Handvoll Basilikum,
einige Zweige Estragon, eine Handvoll
Petersilie 1/2 TL Senf 1/2 Knoblauch

zehe Pfeffer und Salz
ZUBEREITUNG:
1.
Rösten Sie die Kerne ohne Zugabe von
Öl in einer Pfanne. 2. Bereiten Sie aus den
Äpfeln und den Roten Beeten Streifen zu.
3. Stellen Sie diese beiseite. 4. Bereiten
Sie das Dressing zu: Geben Sie alle Zu
-
taten in einen Mixer und schmecken Sie
diese mit Pfeffer und Salz ab. 5. Verteilen
Sie den Rucola auf dem Teller und legen
Sie dann Schichten aus den Roten Bee
-
ten, den Roten Beeten der Sorte Chiog-
gia, den Gelben Beeten und den Weißen
Beeten. 6. Tropfen Sie etwas Dressing
darüber und rund um die aufgetürmten
Schichten und legen Sie die Käsescheiben
darauf. Geben Sie die gerösteten Kerne
darüber.
