Tepid salad of parsnip
and turnip cabbage
Lauwarmer Salat aus
Pastinaken und Kohlrabi
· FOR 4 PERSONS -
FÜR 4 PERSONEN ·
INGREDIENTS:
40 g mixed seeds (pumpkin, sunflower
seeds and sesame seeds) 1 large turnip
cabbage 2 parsnips 1 celeriac
2 carrots sesame oil 2 shallots, fine-
ly chopped 2 cloves of garlic, finely
chopped 2 bay leaves 2 tbsp lemon
juice chopped parsley 80 g alfalfa
pepper and salt
PREPARATION:
1. Roast the seeds in a dry pan. 2. Peel
the turnip cabbage, parsnip, celeriac
and carrot. Cut them into strings and
keep them separate. 3. Pour a dash of
sesame oil in a wok pan and sauté the
shallots and garlic. 4. Then add the tur-
nip cabbage, parsnip, celeriac, carrot
and bay leaves to the wok and cook the
vegetables until they are done but still
crispy. 5. During the last minute, add the
lemon juice, the seeds (partial) and the
chopped parsley. Mix well, adding pep-
per and salt to taste. 6. Garnish the salad
with the alfalfa and remaining seeds.
ZUTATEN:
40 g gemischte Kerne (Kürbis-, Son-
nenblumenkerne und Sesam)
1 großer
Kohlrabi
2 Pastinaken
1 Knollensellerie
2 Karotten
Sesamöl
2 Schalotten,
fein gehackt
2 Knoblauchzehen, fein
gehackt
2 Lorbeerblätter
2 EL Zi-
tronensaft
gehackte Petersilie
80 g
Alfalfa
Pfeffer und Salz
ZUBEREITUNG:
1. Rösten Sie die Kerne und Samen ohne
Zugabe von Öl in einer Pfanne. 2. Schä
-
len Sie den Kohlrabi, die Pastinaken, den
Knollensellerie und die Karotten. Schnei
-
den Sie diese zu Streifen und legen Sie
sie beiseite. 3. Gießen Sie einen Schuss
Sesamöl in einen Wok und braten Sie
die Schalotten und den Knoblauch an. 4.
Geben Sie anschließend den Kohlrabi, die
Pastinaken, den Knollensellerie, die Ka
-
rotten und die Lorbeerblätter in den Wok
und lassen Sie die Gemüse bissfest ga
-
ren. 5. Geben Sie am Schluss der Garzeit
den Zitronensaft, die Kerne und Samen
(teilweise) sowie die gehackte Petersilie
hinzu. Gut mischen und mit Pfeffer und
Salz abschmecken. 6. Garnieren Sie den
Salat mit dem verbliebenen Alfalfa und
den Kernen und Samen.
