Healthy salade
Salade équilibrée
INGREDIËNTEN:
100 g gemengde geroosterde nootjes
(pompoen- en pijnboompitten, sesam-
zaadjes) 2 appels 2 chioggiabietjes
2 rode bieten 2 gele bieten 100 g
rucola 50 g manchegokaas
VOOR DE DRESSING
60 ml olijfolie 2 tl witte rijstazijn
verse kruiden: een handje basilicum,
een paar takjes dragon, een handje
peterselie 1/2 tl mosterd 1/2 teentje
knoflook peper en zout
BEREIDING:
1. Rooster de noten in een droge pan.
2. Maak slierten van de appel en de
bietjes. 3.Hou ze apart en zet ze opzij. 4.
Maak de dressing: doe alle ingrediënten
in een blender en breng op smaak met
peper en zout. 5. Schik de rucola op het
bord en maak dan laagjes van rode biet
met daarop de chioggia, gele bietjes en
witte bietjes. 6. Druppel een beetje dres-
sing over en rond het torentje en leg de
kaasschijfjes en de geroosterde nootjes
erbovenop.

INGRÉDIENTS :
100 g de mélange de graines (potiron,
tournesol et sésame) 2 pommes
2 betteraves chioggia 2 betteraves
rouges 2 betteraves jaunes 100 g de
roquette 50 g de manchego
POUR LA VINAIGRETTE :
60 ml d’huile d’olive 2 c. à café de
vinaigre de riz blanc herbes fraîches :
une poignée de basilic, quelques brins d’
estragon, une poignée de persil 1/2 c. à
café de moutarde 1/2 gousse d’ail sel
et poivre
PRÉPARATION :
1.
Faites griller les graines dans une poêle
sèche. 2. Coupez les pommes et les bet-
teraves en spirales. 3. Réservez.
4. Préparez la vinaigrette : dans un blen-
der, mélangez tous les ingrédients, puis
assaisonnez. 5. Sur l’assiette, déposez la
roquette, puis des couches de betterave
rouge et enfin, les betteraves chioggia,
les betteraves jaunes et les betteraves
blanches. 6. Versez un peu de vinaigrette
au-dessus et autour de la pile, puis dé-
posez les rondelles de fromage et les
graines grillées par-dessus.
