Knapperige salade
met mangosaus
Salade croustillante
à la sauce mangue
INGREDIËNTEN:
1 mango, geschild en in blokjes gesne-
den 250 ml vers ananassap 1 snuifje
chilipoeder 1 tl verse gemberwortel,
fijngehakt 1 tl sesamolie 1/2 knolselder
1/2 komkommer 1 dikke steel van een
stronk broccoli 2 el gemengde zaden
1 handje koriander, grof gehakt rucola
BEREIDING:
1. Zet een paar blokjes mango opzij ter
garnering. 2. Doe de rest van de mango
samen met het ananassap, de chilipoe-
der, gemberwortel en sesamolie in de
blender en meng tot een glad mengsel.
Zet deze saus apart. 3. Snij de knolsel-
der, de komkommer en de steel van de
broccoli in slierten. 4. Leg de groente-
noedels in een kom en giet een deel van
de mangosaus op de noedels. Bewaar de
rest in de koelkast. 5. Schik rucola op de
borden, met daarop de groentenoedels
en giet naar wens de overige saus over
de noedels. 6. Werk af met de zaadjes, de
koriander en de blokjes mango.

INGRÉDIENTS :
1 mangue épluchée et coupée en dés
250 ml de jus d’ananas frais 1 pincée
de piment en poudre 1 c. à café de gin-
gembre frais haché 1 c. à café d’huile de
sésame 1/2 céleri-rave 1/2 concombre
1 grosse tige de brocoli 2 c. à soupe
de mélange de graines 1 poignée de
coriandre grossièrement hachée ro-
quette
PRÉPARATION :
1.
Mettez quelques dés de mangue de
côté pour la garniture. 2. Dans le blender,
mélangez le reste de mangue avec le jus
d’ananas, le piment en poudre, le gingem-
bre et l’huile de sésame jusqu’à l’obten-
tion d’une pâte lisse. Réservez la sauce.
3.
Coupez le céleri-rave, le concombre et
la tige de brocoli en spirales. 4. Mettez les
nouilles de légumes dans un saladier et
versez une partie de la sauce mangue sur
celles-ci. Conservez le reste au frigo.
5. Disposez la roquette sur les assiettes,
puis posez-y les nouilles de légumes et
versez la sauce par-dessus.
6. Finissez par ajouter les graines, la
coriandre et les dés de mangue.
