Chicken á la Provence
Preparation time: 15 minutes
Ingredients for 4 portions:
30 g soft butter
8 cloves of garlic, peeled and ½ nely chopped
2 tsp fresh rosemary, ½ nely chopped
2 tsp fresh thyme, ½ nely chopped
salt, pepper and some grated lemon peel
1 ready-to-cook chicken (approx. 1.4 kg)
240 ml chicken stock
3 tbsp lemon juice
6 small, ½ rm-cooking potatoes, peeled and halved
2 tbsp chives, ½ nely chopped (garnish)
Crème fraîche
Preparation:
Mix together butter, garlic, herbs, lemon peel, salt and pepper rub under the skin, as
well as on the outside and inside of the chicken.
Add chicken, stock, lemon juice and the halved potatoes to the ceramic pot and cook
with the lid closed.
Carefully lift the chicken and potatoes out of the cooking liquid and garnish with
chives.
A gravy can be prepared from the cooking liquid – thicken slightly or reduce and ½ nish
off with crème fraîche.
Peas can be served as an accompaniment.
