1. Prepare la biga el día anterior (véase la receta de la biga
en la pág. 187).
2. Siga el orden indicado en la receta para echar los ingre-
dientes en el molde amasador (donde estará la biga).
3. Mezcle con un cucharón los ingredientes manualmente
durante unos segundos.
4. Meta el molde amasador al horno y seleccione el progra-
ma SE 2.
5. Presione el botón START/STOP.
6. Al nal de la mezcla (25 minutos aprox.) el horno emitirá
unaseñalacústicaysepondráenpausa.Eltiempoenla
pantalla empezará a parpadear; saque la masa del molde
amasador, haga una bola y colóquela en un bol untado
con aceite. Coloque el bol en el horno y presione el botón
START/STOP.
7. Al nal de la segunda fermentación (otros 40 minutos
aprox.) el horno se pondrá de nuevo en pausa: saque el
bol del horno y presione el botón START/STOP (el horno
empieza la fase de precalentamiento). Vierta la masa en
una supercie enharinada, cubra también la supercie
con harina (la masa tiene agua por lo que estará pega-
josa) y forme un cuadrado de 3 cm de altura. Corte el pan
con una espátula cortante y coloque el pan obtenido en
la bandeja anteriormente cubierta con papel de horno.
8. Coloque la bandeja en el horno sobre la parrilla situada
en la guía inferior y presione el botón START/STOP.
9. Después de la primera hornada, introduzca la segunda
(si prevista), programe 20 minutos y presione el botón
START/STOP (siga así hasta acabar las hornadas).
