+ 50 g de nozes + 60 g de queijo gruyère ralado.

equeijão: 200 g de requeijão escorrido espalhado sobre
a massa + 4 salsichas às rodelas + 150 g de fiambre em tiras + 5 azei-
tonas + 50 g de queijo gruyère ralado + orégãos + sal + pimenta.
Quiches: Base: 1 forma de alumínio com um diâmetro de 27 a 30 cm
1 massa quebrada pronta a utilizar
3 ovos batidos + 50 cl de natas
Sal, pimenta, noz-moscada
Recheios variados: 200 g de toucinho pré-cozido em cubos
ou - 1 kg de endívias cozidas + 200 g de queijo gouda ralado
ou - 200 g de brócolos + 100 g de toucinho em cubos
+50 g de queijo azul
ou - 200 g de salmão + 100 g de espinafres cozidos e
escorridos
Lombo de boi assado acompanhado de Molho de vinho SAUTERNES
(vinho branco doce) com SALSA e QUEIJJO ROQUEFORT:
Refogue 2 colheres de sopa de chalotas picadas em manteiga. Adicione
10 cl de vinho Sauternes, deixe evaporar. Adicione 100 g de queijo Roquefort,
deixe derreter lentamente. Junte 20 cl de natas, sal, pimenta. Leve a ebulição
Lombo de porco assadocom ameixas
Peça no talho para cortarem o lombo de porco ao meio sem separar as
duas partes e recheie com umas vinte ameixas. Sirva cortado em fatias ou com
o molho frio acompanhado de uma salada de endívias.
