STANDARD-BROTTEIG
450g gröberes Mehl
1 Päckchen Trockenhefe
5ml Salz
15g Fett
300ml Wasser, lauwarm
KOCHGESCHIRR:
- 2 x 450g Kastenform oder
1 x 1kg Kastenform
1. In einer weiten Schüssel das Mehl, die
Hefe und das Salz vermengen. Das Fett
hinein reiben.
2. Das handwarme Wasser zugeben und zu
einem Teig vermengen.
3. Den Teig auf bemehltem Grund während
10 Minuten kneten. In zwei Hälften teilen
und in einer Kastenform auf doppelte
Grösse gehen lassen; an einem warmen
Ort oder bei 40°C KONVEKTION. Siehe
Anweisungen dort.
4. Mit „KUCHEN BROT – 2 BROT“ zuberei-
ten.
5. Vorgang mit zweitem Brot wiederholen.
FRUCHT-GEBÄCK (FRUIT SCONES)
225g Mehl, backbereit*
1 Prise Salz
5ml Backpulver
50g Butter
25g Streuzucker
50g Sultaninen
150ml Milch
Glasur:
Eier, verklopft
* zu 100g normalem Mehl bitte fol-
gendes dazu geben:
3 g Backpulver
1 g (oder weniger) Salz
KOCHGESCHIRR:
Backblech
1. Mehl, Salz und Backpulver zusammen
sieben. Die Butter hinein reiben, bis die
Mischung wie feine Brotkrumen aussieht.
Zucker und Sultaninen beifügen.
2. In der Mitte eine kleine Grube formen und
genug Milch einrühren, um einen weichen
Teig daraus zu bilden.
3. Leicht kneten. 2 cm dick auswalzen und
mit einer Plätzchenform in 10 Rondellen
von 5cm ausstechen. Auf ein Backblech
legen und mit dem verklopften Ei bestrei-
chen.
4. Mit „KUCHEN BROT – 2 BROT“ zuberei-
ten.
