1¾ taza (415 ml) de crema líquida para batir
(“heavy cream”)
1 cucharada de extracto natural de vainilla
2 cucharadas de Brandy o licor como
Frangelico
®
, Amaretto o Grand Marnier
®
(opcional)
Calentar el chocolate y 2 cucharadas de la
crema a baña María, revolviendo hasta
conseguir una mezcla suave. Retirar del fuego
y dejar entibiar. Agregar la vainilla y el licor.
Colocar el resto de la crema en el bol de la
batidora. Instalar el batidor de alambre y
empezar a batir a velocidad baja. Batir por
aproximadamente 1½ minuto, aumentando
progresivamente la velocidad al nivel 12, hasta
obtener picos suaves.
Incorporar un cuarto de la crema batida a la
mezcla de chocolate. Luego, incorporar
cuidadosamente el resto de la crema batida.
Cubrir y refrigerar por 30 minutos*. Colocar la
“mousse” en boles/copas, usando una
cuchara o una manga pastelera. Decorar con
virutas de chocolate o chocolate finamente
picado y una cucharada de crema batida si
desea.
*Si usa la “mousse” para rellenar una tarta,
echar la mezcla directamente sobre el fondo
de tarta enfriado (ver la receta de tarta de
crema de chocolate en la página 31).

Crema batida
Es fácil pasarse cuando uno bate crema. Cuando la
crema empiece a espesarse, averigüe la textura a
menudo, alzando el cabezal de la batidora. Cuando
consiga picos medio-firmes, deje de batir.
Rinde aproximadamente 3½ tazas (830 ml)
2 tazas (475 ml) de crema líquida para
batir (“heavy cream”)
3–4 cucharadas de azúcar glasé, tamizado
1 cucharadita de extracto natural de
vainilla
Poner la crema en el bol de la batidora.
Instalar el batidor de alambre y batir por
aproximadamente 40 segundos, empezando
despacio y aumentando progresivamente la
velocidad al nivel 12, hasta espesarse. Agregar
el azúcar glasé y la vainilla y seguir batiendo,
teniendo cuidado de no batir de más. Batir por
aproximadamente 1 minuto, hasta obtener
picos medio-firmes.
