PEPERONCINO ROSSO IN POLVERE
85g di peperoncini essiccati misti
1 cucchiaino di origano essiccato
1 cucchiaino di aglio in polvere
½ cucchiaino di semi di cumino tostati
¼ cucchiaino di pepe di Cayenna in polvere
Grigliare i peperoncini in padella a fuoco medio su ogni lato per qualche minuto no a renderli
fragranti. Lasciare rareddare e togliere semi e pelle dai peperoncini.
Rompere i peperoncini in pezzi da 2,5 cm. Versarli nel recipiente di macinatura. Dare 10 impulsi
e poi macinare a fondo per circa 30-40 secondi.
Aggiungere origano, aglio in polvere, cumino e pepe di Cayenna in polvere ai peperoncini
macinati.
Utilizzare immediatamente o conservare in un vaso di vetro a chiusura ermetica. Conservare in
luogo fresco e asciutto.
CURRY IN POLVERE
2 cucchiai di semi di coriandolo interi
2 cucchiai di pepe nero in grani
2 cucchiai di semi di cumino interi
1 cucchiaino di semi di cardamomo, sgusciati, senza baccelli
¼ cucchiaino semi di senape
¼ cucchiaino semi di nocchio
2-3 peperoncini rossi essiccati
1 cucchiaino di curcuma
1 cucchiaino di zenzero macinato
¼ cucchiaino di chiodi di garofano interi
Versare coriandolo, pepe nero in grani, cumino, cardamomo, senape, nocchio e peperoncino in
una padella asciutta a fuoco basso.
Tostare lentamente nché le spezie iniziano a scoppiettare, prestando attenzione a non bruciarsi.
Versare tutto nel recipiente di macinatura. Aggiungere curcuma, zenzero e chiodi di garofano.
Macinare completamente le spezie insieme per circa 30 secondi.
Utilizzare immediatamente o conservare in un vaso di vetro a chiusura ermetica. Conservare in
luogo fresco e asciutto.
