PANCAKES CHOCOLAT, FRAISES AU CARAMEL
150 g de sucre en poudre
10 cl de vinaigre balsamique
250 g de farine
1 c.à c. de bicarbonate de sodium
50 g de cacao en poudre non sucré
1 pincée de sel
2 oeufs
100 g de beurre fondu
25 cl de lait ribot
1 cà s. d’extrait de vanille
Accompagnement
500 g de grosses fraises
50 g de beurre fondu
Porter à ébullition 100 g de sucre et le vinaigre balsamique dans une casserole. Baisser le feu et laisser
réduire pendant 5 minutes à feu très doux pour obtenir un caramel assez épais. Réserver.
Mélanger dans un saladier la farine, 50 g de sucre, le bicarbonate, le cacao et le sel. Ajouter les oeufs,
le beurre fondu, le lait et la vanille. Battre délicatement pour obtenir une pâte onctueuse. Réserver.
• Équeuter et laver les fraises puis les sécher sur un linge.
• Mettre en fonction l’appareil et préchauer la plaque plancha.
Verser de la pâte sur la plaque plancha pour former des petits pancakes. Retourner les pancakes dès
que des bulles se forment à la surface (environ 30 secondes de chaque côté). Réserver.
• Recommencer l’opération de cuisson plusieurs fois.
• Envelopper les pancakes dans une feuille d’aluminium pour les garder au chaud.
Couper les fraises en deux et les mélanger avec le beurre fondu. Les déposer sur la plaque plancha
et les rôtir 1 à 2 minutes. Arroser avec le caramel balsamique et mélanger rapidement.
• Dresser les fraises dans des petits ramequins et les servir avec les pancakes.
Suggestion
Arroser les pancakes d’une sauce chocolat caramel faite avec 100 g de chocolat caramel fondu, 5 cl
de lait et 1 c.à s. de beurre de cacao (si possible).
