Sardienfilets en gegrilde pastinaak

Ingrediënten
24 sardienfilets ontdaan van
graten
1 niet behandelde limoen
5 cl olijfolie
½ gehakt knoflookteentje
1 gehakte lente-ui
½ bosje gehakt basilicum
1 theelepel piment
d’Espelette
Fleur de sel
3 pastinaken geschild en in
staafjes gesneden
5 cl olijfolie
1 theelepel tijmbloem
1 theelepel
aardappelzetmeel
Selderiezout en peper uit het
molentje
Bereidingswijze
Rasp de limoenzeste en pers er het sap uit.
In een schotel mengt u het sap en de zeste met de
olijfolie, de look, de ui en de basilicum. Voeg er de
sardienfilets bij om ze te laten marineren.
Breng op smaak met de piment d’Espelette en de fleur
de sel.
Zet 30 minuten koel.
Meng de staafjes pastinaak met de olijfolie, de tijmbloem
en het aardappelzetmeel.
Breng op smaak met het selderiezout en de peper.
Schakel het toestel in en laat de twee platen
voorverwarmen.
Laat de staafjes pastinaak ongeveer 10 minuten bakken
op de grillplaat en laat vervolgens de sardienfilets
ongeveer 30 seconden aan de velzijde dichtschroeien
op de planchaplaat.
Dien de staafjes pastinaak op in een pot en de
sardienfilets in een kleine schotel.
Suggestie:
Ga de garing van de
pastinaak na door met
een mes in het vlees te
prikken. Wanneer het
mes er gemakkelijk in
en uit gaat, is de garing
perfect.
