Rührwerk
D. Schlagen oder Quirlen
Mit dem Rührwerk kann Eischnee geschlagen werden. Das
Eiweiß in das Gefäß geben und die Taste
drücken. Den
Motor betreiben, bis das Eiweiß zu einer festen Masse geworden
ist.
Trick : für ein noch besseres Ergebnis eine Prise Salz oder einige
Tropfen Zitronensaft hinzufügen. Mit dem Rührwerk können
beispielsweise die folgenden Emulsionen zubereitet werden:
• Schlagsahne, Schaumcreme, Zabaione, Tiramisu…
• Mayonnaise (Béarnaise, Rouille, Mousselinecreme…)
• Baiser
