Salsa de vegetales del huerto
Esta salsa para pasta multiuso es una buena manera de comer su dosis
diaria de vegetales.
Rinde aproximadamente 4 tazas (945 ml)
1 cucharada de aceite de oliva virgen extra
1 cebolla pequeña, en pedazos
1 zanahoria, en trozos
½ taza (40 g) de cubitos de berenjena (con piel)
1 rama de apio, en trozos
2 dientes de ajo, machacados
½ cucharadita de sal kosher
½ cucharadita de orégano seco
½ cucharadita de albahaca seca
1 pimiento dulce rojo asado, en pedazos
¼ taza (60 ml) de vino blanco seco
1 cucharadita de concentrado de tomate
1 lata de 28 onzas (795 g) de tomates cocidos, con jugo
1 pizca de pimienta negra recién molida
1 cucharada de azúcar granulada
1. Calentar el aceite a fuego medio, en una cacerola grande. Una vez
caliente, agregar la cebolla, la zanahoria, la berenjena, el apio, el ajo y
¼ cucharadita de la sal. Saltear suavemente los ingredientes hasta que
estén ligeramente dorados.
2. Agregar el orégano, la albahaca, el pimiento rojo y el vino. Cocer hasta
reducir el vino a la mitad o menos. Agregar el concentrado de tomate,
los tomates y la sal restante. Dejar hervir, y luego reducir el fuego y
cocer a fuego lento durante 35 minutos, parcialmente tapado. Quitar la
tapa y hervir a fuego lento durante 10–15 minutos adicionales. Apagar
el fuego y dejar reposar durante 5 minutos.
3. Usando el accesorio licuador, licuar la salsa a velocidad 3,
directamente en la cacerola. Procesar hasta obtener la consistencia
deseada, cerciorándose de mantener la cuchilla sumergida en la salsa
(dependiendo del tamaño de la cacerola, puede resultar útil inclinar la
cacerola hacia un lado para evitar las salpicaduras).
4. Probar y ajustar la sazón al gusto.
5. Servir inmediatamente, o dejar enfriar, colocar en un recipiente
hermético y refrigerar. La podrá conservarse en el refrigerador durante
hasta una semana. También puede congelarse durante hasta un mes.
