Lomo de cerdo asado con corteza de
hierbas frescas
Le encantará lo fácil que es picar hierbas frescas con el accesorio picador/
moledor de su licuadora de mano.
3 dientes de ajo
2 cucharadas de orégano fresco (hojas solamente)
2 cucharadas de romero fresco (hojas solamente)
2 cucharadas de tomillo fresco (hojas solamente)
1 cucharadita de mostaza de Dijon
1 cucharadita de jugo de limón fresco
cucharadita de sal kosher
¼ cucharadita de pimienta negra recién molida
1 lomo de cerdo de 3 libras (1.3 kg) (en salmuera si desea)
1. Colocar el ajo, el orégano, el romero y el tomillo en el bol. Pulsar 8–10
veces, usando la velocidad 5, para picar grueso. Agregar la mostaza, el
jugo de limón, la sal y la pimienta. Procesar durante aproximadamente
20 segundos para mezclar.
2. Restregar la carne con la pasta. Precalentar el horno a 425°F (220°C).
Nota: dejar la carne a temperatura ambiente mientras el horno está
calentando.
3. Meter al horno por aproximadamente 40 minutos, hasta que la
temperatura interna alcance 145°F (63°C). Si el gusta la carne muy
hecha, asar hasta que la temperatura interna alcance 155°F (68°C).
4. Retirar del horno y dejar descansar durante por lo menos 10 minutos
antes de trinchar.
5. Rebanar a velocidad 5, usando el cuchillo eléctrico y cerciorándose de
mantener su mano firme y de usar presión moderada.
