Meso treba odložiti u posudu za kuhanje tako da ne dodiruje poklopac.
Kod manje ili veće izrezanih komada mesa prilagodite količinu povrća ili krumpira tako da je posuda uvijek ispunjena
½ do ¾.
Veličina komadića mesa i preporučena vremena kuhanja su procijenjena i mogu varirati ovisno o rezanju, vrsti i
strukturi kosti. Mekano meso, poput piletine ili svinjskog bifteka, kuhaju se brže od mesa s mesa s većom količinom
veznog tkiva, kao što su teleći vrat ili svinjska koljenica. Kuhanje mesa na kostima produljit će vrijeme u odnosu na
kuhanje bez kostiju.
Meso izrežite na manje komade kada kuhate s unaprijed kuhanom hranom, kao što su grah ili voće, ili laganim
povrćem, poput gljiva, sjeckanog luka, plavog patlidžana ili sitno sjeckanog povrća. Ovo omogućuje da se svi sastojci
kuhaju istom brzinom.
RIBA:
Riba se brzo kuha i trebala bi se dodati pri kraju kuhanja, tijekom posljednjih 15 minuta do 1 sata kuhanja.
TEKUĆINE:
Moglo bi izgledati da naši recepti sadrže samo male količine tekućine, ali postupak sporog kuhanja razlikuje se
od ostalih metoda kuhanja po tome da bi dodatna tekućina gotovo udvostručila vrijeme kuhanja. Zato, ako recept
prilagođavate za svoje sporo kuhalo, prije kuhanja smanjite količinu tekućine.

GOVEDINA NA BURGUNDSKI NAČINPorcija:3–4
Brašno
Morska sol i papar
700 g file za pirjanje, izrezano na kockice od 2,5 cm
1½ velika mrkva, očišćena i tanko narezana
½ luk srednje veličine, tanko narezan
3 tanke kriške kuhane slanine, izrezano na komade 2,5 cm
150 ml goveđeg temeljca
240 ml crvenog ili burgundskog vina
7 – 8 g pire od rajčice
1 režanj češnjaka, usitnjen
1½ svježe majčine dušice, grančica
1 lovorov list
225 g svježih gljiva, tanko narezano
1. Na govedinu nanesite brašno, začinjeno sa soli i paprom. Propržite govedinu na tavi, na grijaćoj ploči (opcionalno).
2. Stavite mesu u sporo kuhalo Crock-Pot® i dodajte ostale sastojke.
3. Pokrijte i kuhajte na slaboj postavci 8 – 10 sati ili na visokoj postavci 6 sati, ili dok meso ne omekša.
PRŽENA PILETINA S LIMUNOM I BILJEMPorcija:4–6
1,5 kg piletine za pečenje
1 mali luk
Maslac
Sok jednog limuna
2,5 g morske soli
15 g svježeg peršina
5 g osušene majčine dušice
Prstohvat mljevene paprika
100 ml vode ili temeljca
1. U unutrašnjost pileta stavi luk, a na kožu utrljajte maslac. Stavite pile u sporo kuhalo Crock-Pot®.
2. Iscijedite limunov sok preko pileta i posipajte ostalim začinima. Dodajte vode/temeljca i zatim pokrijte i kuhajte na
slaboj postavci 8 – 10 sati ili na visokoj postavci 4 sata.
