Preparazione dei roll-up (cilindri) alla frutta
1. Preriscaldare l'essiccatore a 57 gradi centigradi.
2. Scegliere frutta matura o leggermente più che matura. Lavare e rimuovere macchie, noccioli e buccia.
3. Ridurre la frutta in purea utilizzando un frullatore. Aggiungere yogurt, dolcificanti o spezie come
desiderato. La purea di frutta deve risultare consistente.
4. Coprire i ripiani dell'essiccatore con pellicola trasparente.
5. Versare la purea sui ripiani rivestiti di pellicola trasparente. I bordi si essiccheranno più rapidamente
del centro, quindi se possibile la purea deve essere più sottile al centro del ripiano.
6. Inserire con attenzione i ripiani all'interno dell'essiccatore.
7. Il tempo medio di essiccazione dei roll-up alla frutta va da 4 a 6 ore.
8. Una volta che i roll-up alla frutta si presentino lucidi e non appiccicosi al tatto, rimuoverli dall'essiccatore
e lasciarli raffreddare.
9. Rimuovere la pellicola trasparente e arrotolare in cilindri.
Lievitazione del pane
1. Rimuovere i ripiani e collocare un contenitore raso d'acqua sul fondo dell'essiccatore.
2. Collocare uno dei ripiani direttamente sopra il contenitore dell'acqua.
3. Preriscaldare l'essiccatore a 46 gradi centigradi.
4. Collocare l'impasto sul ripiano e coprire con un panno per impedire che si asciughi.
5. Lasciare lievitare l'impasto (la lievitazione richiede da 30 minuti a 1 ora a seconda della ricetta).
6. Rimuovere l'impasto e continuare seguendo la ricetta.
Pulizia e manutenzione
Disinserire l'alimentazione e togliere la spina e lasciare raffreddare prima di pulire le superfici
esterne e rimuovere i detriti.
I ripiani sono rimovibili e sono adatti al lavaggio in lavastoviglie.
