Hackbällchen auf Wirsing
(für zwei Dampfkörbe)
Zutaten für 4 Portionen
500 g Hackfleisch
600 g Wirsing
1 Ei
1 kleine Zwiebel
Salz, Pfeffer, Paprika, Muskat
6 EL Semmelmehl
3 EL Grieß
Flüssigkeitsmenge im Bodengefäß:
maximale Füllstandsmarkierung
1.
Zwiebel fein hacken. Wirsing grob
hacken.
2.
Aus Fleisch, Ei, Zwiebel und den Ge -
würzen einen Fleischteig kneten. Soviel
Semmelmehl und Grieß zugeben, bis der
Teig fest und formbar ist.
3.
Acht gleichmäßige Bällchen formen
und in den unteren Dampfkorb legen.
4.
Den gehackten Wirsing in den oberen
Dampfkorb füllen. Zusammen mit den
Hack bällchen im unteren Dampfkorb 40
Minuten garen.
5.
Den Wirsing auf einer vorgewärmten
Platte anrichten und mit dem Gemüse fond
aus der Auffangschale begießen. Hack -
fleisch bällchen auf den Wirsing arrangie-
ren.
Eine Braun Multipractic Plus oder ein
Braun Multisystem spart Zeit und Arbeit
bei der Zubereitung dieses Rezeptes: Den
Wirsing mit der groben Schneidscheibe
schneiden. Mit dem Universalmesser die
Zwiebel hacken und 500 g Fleisch zu
Hack fleisch verarbeiten. Den Fleischteig
mit dem Knethaken mischen.
Polpette con verza
(con due vaschette di cottura)
(per 4 persone)
500 g di carne trita
600 g di verza
1 uovo intero
1 cipolla piccola
sale, pepe, peperoncino, noce moscata
6 cucchiai di pane grattugiato
3 cucchiai di semolino
Quantità di acqua da versare nella base:
fino al livello massimo

Tritate finemente la cipolla e grossola-
namente la verza.
2.
Preparate un impasto con la carne,
l’uovo, la cipolla e gli aromi: aggiungetevi
il semolino e il pane grattugiato fino ad
ottenere un impasto compatto e lavorabile.
Per un risultato ottimale potete utilizzare
Braun Multisystem.
3.
Preparate 8 polpette di uguale dimen-
sione e disponetele nella vaschetta per la
cottura a vapore inferiore.
4.
Riponete la verza nella seconda
vaschetta che sovrapporrete a quella con
le polpette; fate cuocere tutto insieme per
40 minuti.
5.
Mettete la verza in una terrina e ver -
satevi sopra il brodo di cottura della
verdura prelevandolo dalla vaschetta
raccogligocce. Riponete le polpette su un
piatto preriscaldato.
Per un piatto più decorativo disponete la
verza su un piatto di portata sovrapponen-
dovi le polpette.
