Hvilke retter drejer det sig om?
Akrylamid opstår primært i korn- og kartoffelprodukter, som
bliver tilberedt ved meget høje temperaturer. Det drejer sig
f.eks. om kartoffelchips, pommes frites, toast, rundstykker,
brød, fint bagværk (kiks, honningkager, spekulatius).

Tips om tilberedning med lavt akrylamidindhold
Generelt Hold tilberedningstiden så kort som muligt. Retterne må ikke brunes alt for kraftigt, men skal være gyl-
denbrune. Ved stegning dannes der mindre akrylamid i store stykker.
Bage småkager Med over/undervarme maks. 200 °C, med 3D-varmluft eller varmluft maks.180 °C. Med over/under-
varme maks. 190 °C, med 3D-varmluft eller varmluft maks. 170 °C. Æg eller æggeblomme formind-
sker dannelsen af akrylamid.
Pommes frites i ovn Fordel dem jævnt og i ét lag på pladen. Bag mindst 400 g pr. plade, så de ikke bliver tørre.
